- 2 Tomatoes, chopped
- ½ Onion, minced
- 1 clove Garlic, minced
- ½ Lime, zested and juiced
- 3-4 Hard boiled eggs, chopped
- 10 Romaine lettuce leaves
- ¾ cup Shredded cheddar cheese
- ¼ cup Cilantro, chopped (optional)
Alternative protein fillings
- 3 Cans Tuna in water, drained or
- 3 Cans Chicken in water, drained
- Prepare salsa in medium bowl by combining tomatoes, onion, jalapeño, garlic, lime zest and juice.
- Mix well and chill until needed.
- Combine chopped eggs, (or drained tuna, chicken) with prepared salsa mixing well.
- Fill lettuce leaves with salsa/protein mixture.
- Garnish with cheese and cilantro if desired.
